We used the Xtrema 4-quart Baking dish but you could also serve this in any of our skillets or bakeware items depending on the size you may need.
Ingredients:
- ¼ cup raw Pistachios or Pecans
- 1/2 small red onion very thinly sliced
- 10-12 ounces fresh baby spinach ( could also sub half arugula!)
- 1-quart strawberries sliced to your liking
- ½ cup crumbled feta goat cheese about half a block turned into crumbles
Balsamic Dressing:
- 1/4 cup balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons poppy seeds
- 1 1/2 tablespoons honey
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
