Ingredients:
- 1 1/3 cup water
- 2/3 cup long grain rice
- 3/4 cup chopped green pepper
- 1/2 cup chopped red onion
- 1 medium carrot chopped
- 1 Tbsp Coconut/Avocado oil
- 3 cloves of garlic chopped
- 1 package of frozen corn
- 1 can black beans
- 2 medium tomatoes chopped
- fresh cilantro
- 2/3 cup olive oil
- 1/3 cup lemon juice
- 1/2 tsp cumin
Instructions:
- Bring water and rice to a boil. Reduce heat, cover, and simmer 15 minutes
- In a small Xtrema skillet, saute the green peppers, onion, and carrot in oil until crisp tender.
- Add garlic, cook 1 minute longer.
- Add to rice. Stir in corn, beans, tomatoes, and cilantro
- In a small bowl, combine oil, lemon juice, and cumin. Pour over rice and stir to coat.
