These Energy Bites are perfect as a quick snack on the go or for a mid day snack after a morning workout. Freeze in our 100% ceramic cookware and these energy bites will hold their form and stay chewy and delicious.
Peanut Butter Energy Bites
Ingredients
- 1/2 cup natural drippy peanut butter (or sub almond butter or other nut butter if choice)
- 1/4 cup maple syrup (or date syrup or coconut syrup)
- 1 teaspoon vanilla extract
- 1/3 cup protein powder of choice*
- 1/3 cup flaxseed meal
- 1/2 cup rolled oats (gluten free, if desired)
- 1/2 teaspoon cinnamon
- 1 tablespoon chia seeds
- 1 tablespoon mini chocolate chips (dairy free if wanted)
- 1/4 cup unsweetened shredded coconut
Instructions:
- Mix all Ingredients in food processor EXCEPT CHOCOLATE CHIPS.
- Once everything is combined mix in chips and form bite sized balls, I use a tablespoon measurement.
- Once all dough is rolled pop them on parchment paper in the freezer so they can get firmer and help ingredient stick together.
- Keep in freezer for up to a month. When eating take out and thaw for 10 minutes prior to eating! Enjoy!!
Nut and Date Energy Bites
Ingredients
- 1 cup raw almonds
- 1 cup walnuts
- 2 cups raisins
- 6 dates, pitted
- 1 teaspoon vanilla extract
- 1 cup shredded coconut (omit if wanted)
Directions
- Place the almonds and walnuts into your high-speed blender or food Processor container and secure the lid. Pulse until everything is blended and combined and make a thick dough/paste.
- Remove the lid and add in the raisins, pitted dates, vanilla, and coconut.
- If using a high soles blender at this point you will Probably need to Use the tamper to combine everything together.
- Once the mixture looks wet and begins to cake, the mixture is done. Roll into bite size pieces I use tablespoon to measure and pop in freezer for up to an hour to firm up. Keep in freezer up to a month. Take out 10 minutes before eating to thaw! Enjoy!!
